Rainbow Detox Salad

Ingredients

  • 1 large beetroot (boiled & shredded)
  • ½ cup boiled broccoli florets
  • ½ cup cherry tomato
  • 1 sweet potato (boiled and sliced)
  • ½ cup red and yellow pepper (chopped)
  • ½ cup fresh chopped basil/oregano/ajwain leaves
  • 1 tablespoon lemon zest
  • Microgreens/alphapla/flax seed
  • 2 tablespoon grated raw mango (optional)

Anti-oxidant dressing

  • 1/4 cup lemon juice
  • 1/3 cup tahini/peanut
  • 1 tablespoon garlic paste
  • ¼ cup raw unfiltered apple cider vinegar
  • 1 tablespoon raw honey/few cranberries
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon liquid amino natural soy sauce
  • 2 dry red chillies

Instructions

For the salad:

  • Combine all the first of ingredients in a large mixing bowl

For the anti-oxidant dressing:

  • Combine lemon juice, tahini, ginger,  apple cider vinegar and honey in a food processor or blender and blend for 1-2 minutes, or until smooth and creamy
  • Toss the salad ingredients with the dressing
  • Plate and top off with a generous sprinkling of the fresh lemon zest.
