Cucumber, Lettuce, Tomato & Basil Salad

  • 100gms Ice burg lettuce
  • 100gms Butterhead lettuce
  • 100gms Lollo rosso lettuce
  • 100gms Loose leaf lettuce
  • 100gms Tomato
  • 10gms Pumpkin seed
  • 100gms Cucumber
  • 20ml extra virgin olive oil
  • 4gms garlic clove crushed
  • 10ml Lemon juice
  • 35gms Basil leaves 35


  • Wash all the vegetables and add in a colander to drain excess water or use a dryer.
  • Halve the cucumber lengthways. Finely slice in to nice shapes and set aside.
  • Roughly cut the lettuce leaf, quarter tomato.
  • Cut basil leaf into halves.
  • Combine all the cut vegetables in a clean bowl, gently toss the salad and then scatter over the pumpkin seeds.
  • For dressing add the garlic, water, olive oil, lemon juice in a blender, blend the mixture until the dressing has reach a pourable consistency.
  • Drizzle the salad dressing over the salad and serve immediately.
