Strawberry Banana Muffin

  • 180g all-purpose Flour
  • 50g Granulated Sugar
  • 50g Light Brown Sugar
  • 4g Baking Soda
  • 3g ground Cinnamon
  • 1 medium Banana
  • 50mL Honey
  • 1 Egg White, beaten
  • 1tsp Vanilla Extract
  • 200g diced Strawberries


  • Preheat the oven to 350F (177C) and spray the muffin tray with cooking spray
  • In a large bowl, combine flour, sugars, baking soda and cinnamon
  • Slice half the banana into thin slices and mash the other half
  • Add the mashed bananas to the dry ingredients and stir
  • Add honey, beaten egg whites and vanilla and stir until just combined
  • Gently fold in the strawberries and banana slices
  • Pour the batter into the muffin tray filling about two-thirds of the way up
  • Bake for 15 minutes or until a toothpick inserted in the middle comes out clean
