Ceviche Salad

Ingredients

  • Tomatoes – 200 gm.
  • Red onion – 50gm
  • Quinoa – 30gm.
  • Parsley – 15 gm.
  • Spring onion – 20 gm
  • English cucumber – 150 gm.
  • Avocado – 200 gm.
  • Lemon – 2 no.
  • Olive oil – 30 ml
  • Crushed black pepper – to taste
  • Salt – to taste

Instructions

  • Soak quinoa in warm water for 20 minutes
  • Cut onions into slices
  • Cut tomato and cucumber in dices
  • Peel and cut ripe avocado in dice shape
  • Chop parsley and spring onion
  • Drain out quinoa water
  • Mix tomato, cucumber, sliced onion and avocado in a bowl.
  • Season with lemon juice, crushed black pepper and salt
  • Arrange in a serving dish and sprinkle chop sring onion and chop parsley on top
